DataConnections

I'm more or less the sys admin for SyncFusion, and the developers are looking for Data sources, etc.

Making connections within reports is straightforward, but I'm curious how to make these in the syncfusion interface (and what's the best practice considering end user report access).

Thanks for using Syncfusion Products. 

Yes, we have option to update the data source from the Dashboard Server and Report Server. 

Please follow the below link to assign the data sources through the Dashboard Server user interface,

And also while assign the permission on the Dashboard/Report to the end user, the data source permission also assigned to them. We no need to provide the data source permission to the end user explicitly.

These are data sources within the reports themselves. What I am referring to is the data source tab in the main interface

I've attempted to attach a screenshot, can't tell in the image is attached.

Within these data sources, I am looking for examples of how to build the string data connections and best practice in terms of using these vs. in dashboard.

Also best practice for building datasets so they are easy to repoint between dev/test/prod.

We suspect that you are expecting to publish data source to dashboard server and import data source from dashboard server. If so, please refer the below documentation link to publish the data source in a dashboard server.

if above things is not your expectation, please provide more details about your requirement for clear understanding. 
 
Note: 
If the admin published the data source in dashboard server, users may download the data source from server based on their access permission.  
 
If your requirement is to create a common shared datasource/shared dataset which can be used by your multiple clients, then you can create a shared datasource/dataset and host the dataset and datasource in report server. We have prepared a video demo for creating shared datasource and dataset in our report server and connecting those datasource and dataset through report designer.
