Best way to limit the number of days shown

What is the best way to achieve this? Say the end user wanted to only see 3 days, how would I change it so it showed say (if it's Monday) Monday, Tuesday, Wednesday?

As of now your requirement of showing only three visible dates in schedule can be achieved by using ScheduleDateRange property in the SfSchedule control. Please refer the below UG documentation for more details about ScheduleDateRange property in SfSchedule control.
