I'm having trouble figuring out how to use the HubTile as part of a DataTemplate, because the docs and examples only show how to set the HubTileTransitions property in code, not XAML.

Thanks for using Syncfusion products.

We have created a sample to use the HubTile as a part of a DataTemplate in GridView and also we have set the HubTileTransitions property in xaml.
The sample can be downloaded from the below location.

We have prepared a sample using SfHubTile as a DataTemplate in GridView and also defined the "HubTileTransitions" property in xaml. Please download the sample from the following link.
