I am currently using UltraWinGrid and am evaluating switching to Essential Grid due to some limitations of UltraWinGrid and was wondering how you would do Grouping in Essential Grid similar to what UltraWinGrid?

right now there would be a lot of effort involved in doing that but we will provide support for grouping in a future version in a couple of months.
