I''m wondering is there any document that explains about the GridModel and GridCellRenderer?

All classes are documented in the class reference that you should be able to access the reference within VisStu help system. Make sure to set the filtered by to (none). You can also access the User Guide from the VisStu help system. It has a section on deriving cell controls which discusses GridCellRendererBase and GridCellModelBase.
