How to use methods in my own button, for example the method "expandAll()"

We have analyzed your requirement. As per your requirement we have prepared the sample to handle the public methods with custom button click actions, you can find the sample from below link

In above sample we have rendered two buttons (ExpandAll/ CollapseAll) and the user when click the CollapseAll button then all record will be changed to collapse state and vice versa.
