ExtractText method returns strange string instead of the text contained in the PDF file

I'm a C# developper using the Syncfusion PDF lib to developp a simple console extracting text from PDF documents. I'm using Visual Studio 202 with the Syncfusion.Pdf.Licensing package v26.1.40.
This application have been working for a few months so far.
I'm now facing the problem of having the method ExtractText returning invalid text data that do not correspond to the one visible in the PDF document. I tried to use different input parameters for the method ExtractText method but the result are alway the "strange" character (see screenshot attached).
