JSX not functional as itemTemplate

Essentially when JSX is used as itemTemplate, the results are empty options. The options do render, and they are clickable, but the inside HTML of the option is completely blank.

So this would not work:

itemTemplate: (data) => {
  return <span>{data}</span>
}

But the following would work:

itemTemplate: (data) => {
   return `<span>${data}</span>`
}

There are no errors in console, so any idea? Also if more information is needed, please say so.
