Even though excel supports "&"  in a worksheet name when you open the file excel says it is corrupt.

grid.excelExport(appendExcelExportProperties, true, exportData).then(wb => {
          wb.worksheets[wb.worksheets.length - 1].name = 'This & That'
          const book = new Workbook(wb, 'xlsx');
          book.save('something.xlsx');
        });

Other feedback:

Sheet name shouldn't accept more than 31 characters or truncate it. (Excel Requirement)

Special characters that excel does not allow in a worksheet name should be removed or throw an error.
