Customize install location for Mac Installers

Is there a way to install in a different location on a Mac? I am trying to chose a different path but the installer forces me to place the installation under Documents. I don't want to do this because it goes to my iCloud and it's using 4GB of my storage. Please advice is there is a way to install to a different location.
